CHICKPEA BLONDIE RECIPE

I am SO excited to share this delicious sweet-treat recipe with you guys!

From some of the questions that I asked you all on Instagram the other day about whether you would like to see more sweet or savoury recipes, it was clear that there is definitely more interest in more sweet recipes. This works just FINE with me because if you haven’t already picked up on it, I LOVE making sweet treats. I love EATING sweet treats and I love sharing sweet treats. I love making these recipes because I want to show that making delicious, decadent treats doesn’t have to be something that is expensive, inaccessible, time-consuming or unhealthy. I mean, chickpeas for freak sake?! YES.

Having said this, be prepared to swoon. Because these chickpea blondies are definitely swoon-worthy. Using household staple ingredients that are relatively cheap, these are one of my latest favorite recipes. I must admit, I’ve been quite obsessed with these the past week; I have been munching on them literally for breakfast, lunch and as a post-dinner somethin’ sweet. They are so satisfying. Fudgy. Dense. and HEARTY (in every sense of the word).

I’ve been on a chickpea train of NOTE this week. You may have noticed slight surge of chickpea-related recipes on the blog of late; in both sweet and savoury dishes.

Ingredients:

·      1 tin of chickpeas, washed and drained

·      ½ cup of all natural peanut butter

·      1/3 cup + 1 tablespoon of dry quick cooking oats

·      ¼ cup of sweet molasses (make sure it’s the sweet molasses and not the bitter one!)

·      ¼ cup of honey (or maple or agave syrup if vegan)

·      4 big blocks of Lindt Chocolate (I used 70% dark chocolate - if you can’t eat chocolate for whatever terribly sad reason, you can swap these out with chopped dates/raisins/cranberries or walnuts)

·      1 teaspoon ground cinnamon

·      ½ teaspoon of Himalayan Pink Salt

·      1/3 teaspoon of baking powder

·      1/3 teaspoon of baking soda

Method:

1.    Preheat your oven to 180 degrees celsius. Line a small baking dish with parchment paper.

2.    In a food processor place the oats and blend until it resembles a flour. Then add in the chickpeas, peanut butter, honey, molasses, cinnamon, salt, baking powder and soda and blend until well mixed and smooth.

3.    Chop the chocolate and add half into the mix, folding it in until it’s evenly spread.

4.    Place the mixture into the baking dish and spread out evenly. Top with the remaining chocolate bits and place into the oven for 35 minutes. Let cool slightly in the baking tray.

5.    Slice into your desired sizes and ENJOY!!
