5-Minute Raw Salted Caramel Halva Bars

Hi everyone – so, it’s a little quick stop recipe this week! One evening this week I was suddenly hit with a MASSIVE HANKERING for something sweet, rich, creamy, decadent but also healthy. I had pretty much nothing ready-to-munch at hand & so, I made it my mission to whip something up that ticked all the previously mentioned boxes within minutes.

Cue the creation of … (drum roll please …) these delicious SUPER quick-fast, salted caramel halva bars. They legitimately taste like halva; you know that delectable sweet treat made out of sugar & sesame seeds? Well this is the '“lets-find-a-way-to-have-halva-for-breakfast” version that makes having that delicious sweet treat a SUPERCHARGING way of beginning the day without skimping on any of the needed nutrients to power you through your days but still satisfies that hankering for something sweet.

These are nutrient-dense, protein-rich and simply so freaking YUM. They firm up so beautifully once they’ve been in the fridge for a few hours and have a perfect textural balance between soft & firm, crunchy & soothing sweet & salty, nutty & creamy. To top it all off, these literally take about 7 minutes to whip together - like really, no exaggeration here. Convenient food never tasted so dang good. These are also pretty darn full-proof. And also really versatile: if you feel like adding chocolate chips, you can. If you feel like adding toasted almonds or coconut or macadamia nuts or pistachios or raisins YOU CAN. These bars are great to pack in for school/work or kids lunches! Or to take with on a picnic or hike or on a busy travel day. Or simply to have on offer as some finger-licking finger food at a dinner party or other social gathering.

3.     Now place the dry ingredients with the wet ingredients in the bowl & mix well. Add in a couple more raw pumpkin seeds for textural variance and mix again until a tight ball of dough forms.

4.     Line a small container with parchment paper & press the dough into the container. Place into the fridge to firm up & then cut into your preferred size and shape and then …

5.     TUCK IN & ENJOY!
